5″ Japanese Style Kitchen Utility Knife with feature Hamon line.
This handy utility knife is perfect for so many tasks around the kitchen. It has a narrow blade which tapers to a razor-sharp cutting edge making it perfect for precision slicing and chopping. Smaller Japanese knives like this are sometimes referred to as fruit knives, but it can be used for so much more than just apples, for example, it’s the perfect size to be used as a charcuterie knife or on a cheese board.
This knife has a 1095 high carbon steel blade, hand forged using traditional methods, with a wickedly sharp, hand ground and polished cutting edge. The blade features a Hamon line which is created by the differential hardening of the blade during the heat treat process. This technique leaves a pattern on the blade which denotes the difference between the relative hardness of the steel. This is further exposed by extensive hand sanding an acid etching to bring out the Hamon line.
The Ash handle is a simple shape which feels comfortable and well balanced in the hand, it features a steel bolster and is secured with a single brass pin.
